More than 50years Francia produces fresh traditional cheeses, the Mozzarella cheese, the ‘Fior di Latte’ –the traditional form of the mozzarella with head, the Ricotta – soft and fresh  , and the delicious Mozzarella di Bufala PDO. Francia has 2 factories in the province of Latina, near to Rome, in the Lazio region.

The secret of quality

By Francia every mozzarella is made without citric acid, so that the real taste will not disappear. For the ‘Consortium della Mozzarella di Bufala’ PDO requires a production according to the traditional recipe, full buffalo-milk, of Italian roots living in semi-liberty, and only living on the prairies of the regions Campagna, Lazio and parts of Puglia & Molise.
